The dining craze of Spain has moved across continental United States to Spokane, Washington.

What are tapas? In short, “Little dishes”, “Little plates”, incredibly interesting, small portions of food served as part of a social scene.

Spaniards go to restaurants to converse, join friends, argue, joke, and flirt. Tapas are provided to keep them going.

Tapas means “to cover” and the first tapas served in the 1500's were a slice of ham on top of a sherry glass to keep out the flies. Barkeeps discovered the saltiness of the ham spurred beverage sales and a tradition was born.
